Delicious Peach Appetizers

With peaches in their perfect season right now, why not create and serve some delicious peach appetizers? There are many different recipes that can bring out the true peach flavor. Combine peaches with prosciutto, nuts or cheeses and you have a delectable peach appetizer which compliments those ripe peaches. Try these delicious peach appetizer recipes before the end of the peach season.

Pancetta Wrapped Peaches

Ingredients:
  • 16 thin slices of pancetta

  • 2 medium freestone peaches - halved, pitted and cut into 8 wedges each

  • Salt and freshly ground pepper

  • 16 basil leaves

  • Toothpicks

  • Balsamic vinegar, for drizzling
Directions:
  • Lay the pancetta slices out on a work surface. Set a peach wedge at the edge of each slice, season with salt and pepper and top with a basil leaf. Roll up the pancetta to enclose the peaches and secure with a toothpick.

  • Heat a grill to medium. Place the peaches on the grill and grill, turning so each side is cooked, until the pancetta is crisp and the peaches are soft, 20-25 minutes.

  • Transfer to a platter and lightly drizzle the peaches with aged balsamic vinegar and serve. Makes 16 appetizers.

Chipolte Peach Salsa with Cilantro

This recipe would be perfect to serve while relaxing during a summer evening! Make your own tortilla chips to compliment the salsa. Pair it with a glass of Riesling or even an ice cold cerveza!

Ingredients:
  • 1 cup sliced canned peaches, drained

  • and chopped

  • 1/3 cup chopped red onion

  • 2 cloves garlic, minced

  • 1 1/2 teaspoons minced fresh ginger root

  • 2 teaspoons minced chipotle peppers in

  • adobo sauce

  • 1/3 cup chopped fresh cilantro

  • 1/2 lime, juiced

  • salt and pepper to taste
Directions:
  • In a bowl, mix the peaches, onion, garlic, ginger, chipotle peppers in adobo sauce, cilantro, and lime. Season with salt and pepper. Chill until serving.

Peaches, Prosciuitto di Parma, and Goat Cheese Crostini

Although this recipe sounds fancy, it is actually quite easy to put together. This crostini recipe is delicious and your guests will surely be asking you for the recipe.

Ingredients:
  • 12 slices of bread from a thin baguette, about half an inch to 3/4? thick

  • 1-2 peeled garlic cloves

  • Goat cheese (I like Charvie's 5.3 oz pyramid because it's so easy to spread; if using a regular log make sure you let it come to room temperature before using)

  • 1 ripe peach, sliced into 12 slices

  • 1/4 lb of prosciutto di Parma
Directions:
Arrange slices of bread on a pan and broil until just golden brown, which should take no longer than five minutes (and likely shorter depending on how well your broiler works). Remove from oven and let cool slightly; when they are still warm but easier to grasp rub the garlic clove over the toasted side of all of the slices. Spread a thin layer of goat cheese on each slice, then a little piece of the prosciutto, and finally the peach. Arrange on a serving platter and serve immediately.

Peach and Brie Quesadillas with Lime-Honey Dipping Sauce

The combination of the brie cheese with ripe peaches is a yummy explosion in your mouth! They perfectly accent one another and make for a delicious appetizer. The lime-honey dipping sauce is that perfect finishing touch.

Ingredients:
Sauce:
  • 2 tablespoons honey

  • 2 teaspoons fresh lime juice

  • 1/2 teaspoon grated lime rind
Quesadillas:
  • 1 cup thinly sliced peeled firm ripe peaches (about 2 large)

  • 1 tablespoon chopped fresh chives

  • 1 teaspoon brown sugar

  • 3 ounces Brie cheese, thinly sliced

  • 4 (8-inch) fat-free flour tortillas

  • Cooking spray

  • Chive strips (optional)
Directions:
  • To prepare sauce, combine first 3 ingredients, stirring with a whisk; set aside.

  • To prepare quesadillas, combine peaches, 1 tablespoon chives, and sugar, tossing gently to coat. Heat a large nonstick skillet over medium-high heat. Arrange one-fourth of cheese and one-fourth of peach mixture over half of each tortilla; fold tortillas in half. Coat pan with cooking spray. Place 2 quesadillas in pan; cook 2 minutes on each side or until tortillas are lightly browned and crisp. Remove from pan; keep warm. Repeat procedure with remaining quesadillas. Cut each quesadilla into 3 wedges; serve with sauce. Garnish with chive strips, if desired.
Note: Placing the fillings on one side of the tortilla and folding the other half over (like a taco) makes the quesadillas easier to handle. Whole wheat tortillas would also be great, offering a sweet, nutty taste. The lime-honey dipping sauce balances the richness of the buttery filling.
