This is a very healthy and flavorful way to cook vegetables, because it is not necessary to add butter and high fat oils. When preparing and grilling vegetables for a vegetable pizza, you can add more flavor by adding a little extra virgin olive oil and some fresh herbs or spices. Grilled Vegetable Pizza Recipe

Ingredients:
  • 1 cup mozzarella, cut into ½ inch cubes
  • 1 and 1/2 cups shredded light cheese
  • ½ to 1 cup pizza sauce
  • 1 pound pizza dough
  • 1 red bell pepper, cut into thinly sliced rings
  • 1 yellow squash, sliced thinly sliced
  • 1 half of eggplant thinly sliced
  • 1 zucchini, thinly sliced
  • 4 ounces mushrooms, thinly sliced
  • 1 red onion, thinly sliced
  • 1 tablespoon cornmeal
  • 3 tablespoons extra virgin olive oil
  • 1 dash of black pepper
  • 1 clove garlic, crushed
  • 3 tablespoons chopped fresh oregano

Preparation:
  • Preheat the grill to a medium-high heat.
  • Brush 2 tablespoons of the extra virgin olive oil over the vegetables, and then arrange them on an oiled grill plate.
  • Grill both the bell pepper and eggplant for about 3 minutes on each side.
  • Grill the yellow squash and zucchini for about 2 minutes on each side.
  • Remove the vegetables from the grill.
  • Dust the cornmeal over a baking sheet.
  • Stretch or roll the dough into a 14 inch circle, making a lip around the edge.
  • Put the pizza dough on the baking sheet.
  • Drizzle the rest of the oil over the dough.
  • Spread the pizza sauce evenly over the dough.
  • Place half the oregano over the dough and then the garlic.
  • Place the mozzarella on top of that and then add the grilled vegetables.
  • Add the mushrooms and onions, the rest of the oregano, the natural shredded cheese and a dash of black pepper.
  • Place the baking sheet away from the hot coals.
  • Close the grill and grill the pizza for about 12 minutes or until the cheese has melted and the crust is golden in color.

After about 12 minutes, take the pizza off the grill and get ready to enjoy a delicious treat! Gather everyone around, set up the table, no Oneida flatware necessary to enjoy this healthy summer time treat - just need your hands! Enjoy!
