Spinach Souffle Delight - An Impressive, Yet Easy, Way to Serve Spinach!

Remember Jack Sprat and his wife from that classic fairy tale? Between the two of them they "licked the platter clean."

Well, that's what you'll want to do with this easy, yet delicious, spinach souffle!

And don't worry that you can't make a souffle. If you can whip up egg whites and fold them into the rest of the ingredients, you can make THIS souffle! But even if your souffle falls flat before you get it to the table, it will still be yummy! The hardest part is knowing when to take the souffle out of the oven. Don't over bake. A souffle is meant to be moist, not dry.

Here's what you'll need for this delicious dish:

1 Tbsp. butter
1 Tbsp. flour
1 c. milk
1/2 tsp. salt
1 c. grated sharp cheese
3 eggs, separated
1 c. cooked spinach (you can prepare a box of frozen spinach for this recipe, but it's easy to cook fresh spinach yourself)

Directions:

Make a white sauce of first 4 ingredients in a saucepan over medium heat.

Once the mixture has thickened a little, add cheese: stir until blended.

Add unbeaten egg yolks, 1 at a time.

Add spinach; mix well.

Beat egg whites until stiff; fold into mixture.

Place in 1 1/2-quart casserole. Bake at 325 degrees for 40 minutes.

Avoid the temptation to open the oven door during baking. This may cause the souffle to fall.

Yield: 4 servings.

Serve your souffle as a sidedish with chicken or fish or use it to top a baked potato, or as a sandwich filling with crusty bread. It's also tasty over rice, or served with fresh tomatoes or potatoes. Enjoy it for breakfast with bacon or sausage and biscuits.
