Southern Key Lime Pie

Ingredients for Southern Key Lime Pie:

• 3 large eggs
• 1 cup of granulated white sugar
• ¼ cup of all purpose flour
• 3 tablespoons of cornstarch
• ¼ teaspoon of salt
• 2 cups of water
• 1 tablespoon of butter
• ¼ cup of key lime juice
• Finely grated peel of one lime
• 1 pie shell - baked and 9 inches
• ¼ teaspoon of cream of tartar
• 5 tablespoons of white sugar

Directions for making Southern Key Lime Pie:

• Separate the eggs and yolks and place the egg whites aside
• Take a small mixing bowl and beat the egg yolks in it
• In a saucepan on medium heat, combine the 1 cup of white sugar, cornstarch, salt, and flour
• Gradually stir in the water while cooking until it is thickened
• Gradually stir about 1/3 of the mix into the beaten egg yolks
• Stir the mix into the remaining hot mix in the pan
• Continue to cook over low heat
• Stir every two minutes
• Stir in the peel, butter and lime juice
• Pour the mixture into the baked pastry shell and cool
• Mix the meringue on the top and heat till they are brown in the oven
• To make the meringue topping, eggs are beaten till they are light and frothy
• Add the ¼ teaspoon tartar cream and go on beating until the egg whites are stiff and form peaks
• Gradually add 5 tablespoons of sugar and continue to beat until the meringue is stiff and glossy
• Over the pie filling which is cooled now, Pile the meringue lightly
• Spread meringue till it reaches edges of the pastry to prevent it from shrinking
• Bake in a preheated oven at 425 degrees until the top is brown for about 5-6 minutes

Let the pie cool and serve. You may garnish the pie slices with little pieces of the key lime rind to add a little extra touch to this delicious recipe for Southern key lime pie. If you want to alter the recipe a little bit, you can top the pie with whipped cream instead of meringue. That works best if you are in a time crunch and do not want to make the meringue. You can serve this tasty dessert after your southern meal or on its own as a nice afternoon treat with some coffee or tea.
